The 31-year-old scooped the ball over Lee Grant after Erik Pieters only managed to squirm a desperate clearance attempt right into Cahill's grateful path.
The goal gave Antonio Conte's men a 2-1 victory, and a 13-point lead over idle Tottenham and Manchester City.
