Quique Sanchez Flores' side is looking to add depth following the reported departure of attacker Matej Vydra to Reading on a season-long loan.
Ibarbo spent the last seven months with Serie A bridesmaids Roma on loan from Cagliari, where the lanky striker played in each attacking role, making 10 appearances for the club.
The Colombian joins a Watford side that already added Alessandro Diamanti, Nathan Ake, Allan Nyom, Etienne Capoue, Adlene Guedioura, and Jose Holebas this summer, as the Premier League new boys are desperate not to emulate past yo-yo clubs.
